Rabbit Stew
INGREDIENTS
• 1-2 lbs rabbit
• 3 potatoes quartered
• 4 carrots sliced
• 1/2 medium chopped
• 1/2 teaspoon Kosher salt
• 1/4 cup beef consommé
• 1/2 cup broth
• 3/4 teaspoon pepper
• 1/8 teaspoon basil
• 1 bay-leaf
• 1/8 teaspoon rosemary
• 1/8 teaspoon thyme
DIRECTIONS
• Cut rabbit into pieces. Layer onion, potatoes, and carrots in bottom of a crock pot.
• Add spices to the pot.
• Add rabbit, salt, pepper, consommé, and about 3/4 cup beef broth.
• Cover and cook on low for 6-8hours. Thicken gravy as desired.
• Serve in a medium to large bowl/dish.
• Have your favorite bread as a side for dipping in the stew.
Mahi-Mahi Recipe
Ingredients
- Prairie Natural Vacuum-packed Mahi-Mahi fillets.
- Olive or Coconut oil
- Sea salt
- Pepper
- Cajun seasoning
- Parika Pepper
- Ice burg lettuce
- Garlic (chopped)
- Tomato (chopped)
- Red Onion (chopped)
- Lime juice
- Cilantro (chopped)
- Jalapeno (chopped)
- Mango (chopped)
- Mayo
- Garlic salt
- Honey
- Red wine vinegar
Mahi- Mahi PREP
- oil front and back of mahi fillets. Season salt, chopped garlic, and pepper all around fillets. Set on backing sheet. Set oven to 350F, bake for 15-20 min. Let sit for 10 min, then cut into bite pieces.
Mango Sauce
- in a separate bowl: mix tomato, red onion, cilantro, mango, jalapeno, honey, lime juice, one small spoon of red wine vinegar & add a little salt and pepper to your liking.
Cajon Aioli
- blend or mix: Mayo, garlic powder, cajon seasoning, & Paprika
PREP:
- set the mahi-mahi pieces inside the ice burg lettuce, add your mango sauce, top with Cajun Aioli & ENJOY.
Roasted Lemon Garlic Shrimp w/ Herbs!
Ingredients:
1 pound 16/20 white specific shrimp, peeled and deveined, tail on
3 cloves garlic, minced
2 tablespoons fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
1 tablespoon fresh parsley, chopped
1 lemon, juiced and zested
1/4 cup white wine
3 tablespoons unsalted butter, melted
2 tablespoons olive oil
Salt and pepper to taste
Instructions:
Preheat the Oven: Preheat your oven to 350°F (175°C).
Prepare the Shrimp: In a large bowl, combine the shrimp, minced garlic, chopped rosemary, thyme, and parsley. Add the lemon juice, lemon zest, olive oil, salt, and pepper. Toss everything together until the shrimp are well coated.
Add Wine and Butter: Pour the white wine and melted butter over the shrimp mixture. Toss again to ensure the shrimp are evenly coated with the wine and butter.
Arrange the Shrimp: Spread the shrimp out in a single layer on a baking sheet lined with parchment paper or a lightly greased baking dish.
Roast the Shrimp: Roast the shrimp in the preheated oven for 10-12 minutes, or until the shrimp are pink, opaque, and cooked through. Be careful not to overcook the shrimp as they can become tough.
Serve: Remove the shrimp from the oven and transfer to a serving platter. Garnish with additional fresh herbs if desired. Serve immediately with a side of your choice, such as crusty bread, rice, or a fresh green salad.
Tips:
For a bit of heat, add a pinch of red pepper flakes to the shrimp mixture before roasting.
You can also add a few slices of lemon on top of the shrimp before roasting for an extra burst of lemon flavor.
